NOT SAKE
The name "NOT SAKE" was born from our desire to deliver "sake so delicious it doesn’t seem like sake."
In reality, most of the sake consumed overseas has already deteriorated in quality and flavor. Sake is an extremely delicate beverage, and improper temperature control during transportation or storage can significantly degrade its taste.
Even sake that starts at a perfect 100 points can drop to 90, 80, or even 70 points if mishandled.As a result, the majority of sake enjoyed abroad doesn't reflect the true essence of Japanese sake.
We want people to experience the authentic taste of sake—crafted fresh and full of flavor, produced locally to maintain its highest quality.
Our mission is to deliver "sake so delicious it doesn’t seem like sake."
That’s the inspiration behind the name "NOT SAKE."
Commitment to Freshness
All the sake we offer is namazake, a type of unpasteurized sake that undergoes no heat treatment. Typically, sake is pasteurized after production—a process known as hiire. While this helps stabilize the flavor, it diminishes the sake's freshness and disperses its aroma.
To let people enjoy the original "fresh taste and fragrance of sake," we produce and deliver unpasteurized namazake locally, preserving its natural essence.

All of our sake is crafted from rice polished to a 35% polishing ratio. This ratio refers to how much of the rice grain has been milled away and is one of the most critical factors determining the quality of sake. The more the rice is polished, the more impurities are removed, resulting in a cleaner taste and a more refined aroma.
However, the higher the polishing ratio, the greater the cost of raw materials, which naturally increases the price. Since the polishing ratio has the most direct impact on both flavor and price, it serves as the key factor for determining the quality grade of sake.
We go beyond the highest standard of 50% polishing by using rice polished an additional 15%, achieving a 35% polishing ratio(A polishing ratio of 35% refers to the state where 65% of the rice has been polished away). Polishing beyond this point would compromise the umami flavor, making 35% the perfect balance of clarity and richness. This creates an extraordinary flavor profile that balances depth and refinement.
